From Portable Kitchen to Brick & Mortar!
With the portable kitchen going from event to event, Juan needed a more permanent location to serve his local community. He enlisted the help of his son Ed and his wife, Michelle, and together in 2017 they opened Tacos La Gringa in Bloomfield, NJ. What started as a single cart serving hungry neighbors at local gatherings has grown into a beloved family-run restaurant, but the philosophy hasn't changed - fresh ingredients, honest prices, and recipes rooted in real Mexican tradition. Juan still oversees the kitchen personally, making sure every order that leaves the counter meets the same standard he set with that first cart years ago. Today, three generations of the family are involved in daily operations, and many of the original catering customers are now regulars at the restaurant.
